In March of 1986 John and Anne Blair along with 9 year old Richard, 11 year old Judy and 13 year old Duncan made the move from leafy Ballintemple in Cork City to the rolling countryside of Cloghroe in the Parish of Iniscarra 8 miles from the City.
Blairs Inn first opened it's doors on the 3rd of March 1986 serving only drinks, however Anne and John had bigger plans. At first food was served simply to feed the local workers from the nearby Blarney Estate. Simple fare such as Irish Stew and Corned Beef and Cabbage was produced by Anne in the tiny kitchen and happily devoured by the local workmen. Soon word spread and other hungry customers turned up looking for some of Anne's fine home cooking. It was around this time circa 1988 that the Blairs produced their first menu, written on a chalk board before the start of service everyday with whatever was fresh, seasonal and close at hand. Even in these early days freshness and quality were at the forefront of everything that Anne and John produced from their little kitchen. Juicy Dublin Bay Prawns served with homemade Brown Bread, Garlic Crab Claws from Kenmare Bay, Comforting Cottage Pies and Beef Stews were gaining noteriety both for their simplicity and flavour.
